Oh My! How Many Carrots Is That?

At only 30 calories per 1 cup serving, carrots provide you with a good amount of lutein (for the eye), vitamin K (for blood clotting), and fiber (for a healthy colon) and are a top source of beta-carotene (for the other eye :)  Carrots are one of the few vegetables that I ALWAYS buy organic!  I just scrub them well and leave the peel on for more fiber!  Here are a few of my favorite ways to enjoy the sweet taste of these amazingly brilliant colored root vegetables:


  • Raw, of course.  Just like Bugs Bunny eats it.
  • Shredded in a salad or cole slaw.
  • Simmered until soft in any kind of soup (chunks or slices)
  • Matchsticks or coins in a stir-fry
  • Oven Roasted, like this:  Cut 4 medium carrots into 1" chunks.  Toss with 1 tablespoon olive oil, 4 cloves of chopped garlic, a touch of fresh thyme, 1/4 teaspoon black pepper and salt.  Roast at 400 degrees on a sheet pan for about 30 (up to 45) minutes and season with a splash of lemon juice. Delish!!

Now open up your vegetable drawer and find that buried bag of carrots and start munching for your health!
